The Old Tom style is typified by a rich and well-rounded flavor profile of botanical depth (as compared to the sharp, angular profile of London Dry) complemented by a light sweetness. While certain elements might along be aromatic or bitter, in combination they yield a depth of flavor and mouth-feel unique to the Old Tom style. About Hayman Distillers
The original company of Hayman Distillers was founded in 1821 and acquired in 1863 by James Burrough, the great Grandfather of the current Chairman, Christopher Hayman. James Burrough created the world renowned Beefeater Gin. Although Beefeater Gin and James Burrough Limited were sold to Whitbread in 1987, the Hayman family retained part of the business and continued the tradition of distilling and blending Gin and other white spirits.
